Yogurt Granola Bowl

Ingredients:
Granola
- 2 cups Oats
- 1 tsp. Vanilla Extract
- 1/4 cup Coconut Oil or Olive Oil
- 1/4 cup Honey
- 1/2 tsp. Ground Cinnamon
- 1/2 cup Sliced Almonds
- 1/2 cup Pecans
- 1/4 cup Chia Seeds
- 1/4 cup Flaxseed Meal or Hemp Hearts, optional
- Salt to tastes
Yogurt Bowl
- 3 cups Greek Yogurt, nonfat, plain
- 3 cups Frozen Unsweetened Blueberries
Method:
- Preheat oven to 300 ˚F. Line a baking sheet with parchment paper.
- In a large bowl combine oil, vanilla extract, honey, cinnamon and salt. Add oats, almonds, pecans, chia seeds and, if desired, flaxseed meal. Stir until well mixed.
- Pour mixture onto prepared baking sheet and spread into an even layer. Bake for about 20 minutes, stirring halfway through until lightly golden. Let cool for 30 minutes.
- To serve, top ½ cup yogurt with ¼ cup prepared granola and ½ cup blueberries.
- Store the remaining granola in an airtight container for 2 weeks or in the freezer for 3 months.
