Melon and Mint Sorbet
Prep time: 30 minutes (plus freezing time)
Cook time: 10 minutes
Total time: 10 minutes
Serves: 8
Ingredients:
- 1/2 cup granulated sugar
- 1/2 cup light corn syrup
- 3 tablespoons water
- 1/2 cup mint leaves, plus more for garnish
- 2 tablespoons lime juice
- 1/4 teaspoon salt
- 6 cups Cantagold Cantaloupe, MelloSweet Honeydew or Watermelon, cubed
Method:
- Combine sugar, corn syrup and water in a small saucepan over medium heat. Stir until sugar is completely dissolved. Bring to a simmer and remove from heat. Add mint leaves, lime juice and salt.
- In a blender combine sugar syrup mixture and melon. Blend until smooth. Cover and chill mixture at least 4 hours.
- Churn chilled mixture in an ice cream machine according to manufacturer’s directions. Transfer sorbet to freezer, cover and chill until ready to serve. Scoop and garnish with fresh mint leaves.
