Dill Pickle Chicken Salad

Total time: 40 minutes (includes chilling time)
Serves: 6
Ingredients:
- 1/2 cup whole milk Greek yogurt
- 1/4 cup mayonnaise
- 2 (12.5 oz) cans chunk white chicken breast, drained
- 1/2 cup chopped kosher dill pickles, plus more for garnish
- 1/4 cup diced red onion
- 1 celery stalk, diced
- 2 Tbsp chopped fresh dill, plus more for garnish
- 1 Tbsp pickle juice
- 1/2 tsp kosher salt
- 1/4 tsp ground black pepper
Method:
- Combine yogurt and mayonnaise in large bowl until smooth. Add chicken, pickles, red onion, celery, dill, pickle juice, salt and pepper and stir until all ingredients are evenly distributed.
- Cover and refrigerate until chilled, at least 30 minutes. Garnish with additional chopped pickles and dill. Serve and enjoy.
Tip: Serve chicken salad on its own, in a sandwich, or wrapped in lettuce leaves!
